Raw Carrot Mash
Mix carrot pulp with honey, a splash of unsweetened apple juice, cinnamon, and nutmeg to taste. Throw in some walnuts and enjoy as a snack.
Healthy Spinach Dip
Blend spinach pulp with 1 cup of plain Greek yogurt. Add 1 small clove of garlic, minced and salt and pepper to taste. You may want to add 1 tablespoon of chopped fresh mint for an extra burst of freshness. Use as a dip for fresh vegetables or rice crackers.
