Makes 12-16 patties
- 1 large sweet potato (about 3 cups worth)
- 1 large cooking onion (about 1 cup worth)
- 2 garlic cloves, minced
- 2 green onions, chopped
- 4 tbsp ground flax seeds
- 1 tsp ground cumin
- ½ tsp ground cinnamon
- ½ tsp ground cayenne powder (optional)
- 1 tbsp apple cider vinegar
- Sea salt and ground black pepper, to taste
- 1 egg
First, the sweet potato and cooking onion need to be cooked until soft. This can be done by roasting them whole, with their skins on, in a 350°F oven, until soft. Alternatively, they can be boiled until soft.
Once cooled, peel the sweet potato and cooking onion.
Place in a large bowl and mash with a fork or potato masher.
Add the rest of the ingredients (except the egg) and mix well to combine. Taste and adjust for seasonings to your liking.

Let the mixture rest in the refrigerator for 30 minutes (or more) to allow time for the ground flax seed to thicken the mixture.
Preheat the oven to 400°F.
On a large parchment lined cookie sheet, deposit 2 heaped tablespoons of mixture per patty and flatten into a disk shape.
Bake on the middle oven rack for 20-30 minutes per side until crisp along the edges and set in the middles.
