- 1 medium head of cauliflower, cut into small florets
- 3 tbsp olive oil
- Juice of ½ a lemon
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- ½ tsp black pepper
- 1 tsp paprika
- 3 cloves garlic, minced
- Sea salt, to taste
Preheat the oven to 400F.
Prepare the cauliflower florets, wash and dry thoroughly, and set aside.
In a large bowl, combine all other ingredients.
Add in the cauliflower and toss well to coat.
Lay cauliflower in a single layer on a parchment-line cookie sheet and place on the middle oven rack.
Cook for 20-25 minutes, then check for doneness. At this point, they should still be crisp but feel free to watch them and remove them when they’re cooked to your liking.
A splash of olive oil, lemon juice and a sprinkling of sea salt as soon as they come out of the oven adds a little extra to the dish.
