I miss the summer! For me, one thing that screams summer is the smell of tomato plants, they seem to grow everywhere! In fact, last summer, out of nowhere, a tomato plant sprouted in the middle of a flower bed in our front yard. We didn’t plant it, not sure where it came from! A squirrel must have planted it there… Anyway, this recipe reminds me of warmer weather because I made so much of it last summer. In the midst of winter, we all need a reminder of sunny days past and hopefully soon to come!
Note: I used to make this recipe by hand but was in a rush one day and used the food processor instead. Not as pretty but just as tasty, and in a fraction of the time!
- 4 medium “on-the-vine” tomatoes
- 2 cups cherry or grape tomatoes (assorted colours in available)
- 2 green onions
- 1 small jalapeno, seeds removed (optional, use more or less depending on spice level desired)
- 1 cup cilantro leaves
- 1 tbsp olive oil
- 1 tsp vinegar
- Juice of 1 lime
- 1 tsp peri-peri sauce (optional)
- Pinch of red pepper flakes (optional)
- Salt and pepper, to taste
Option 1 (By hand)
– Finely dice tomatoes, thinly slice green onions, mince jalapeno, finely chop cilantro, then combine all ingredients in a bowl, mix well, and serve chilled
Option 2 (Food processor)
– Place onions and jalapeno in the food processor and run until finely chopped
– Add tomatoes and pulse until you reach desired consistency
– Empty into a bowl and add finely chopped cilantro and all other ingredients, mix well, and serve chilled
