Makes ~24 small meatballs
- 1 lb ground turkey meat
- 1 medium onion, grated
- 1 clove garlic, finely minced
- 5 tbsp ground flax seed
- 1 large egg
- 1 tsp chopped green chilies (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp vinegar
- Sea salt and black pepper, to taste
Preheat oven to 400 F.
In a bowl, add all the ingredients and mix well to combine.
Let rest in the refrigerator for 20-30 minutes (optional; this step lets mixture firm up).
Form mixture into small meatballs (about 24) and place on a parchment-lined baking sheet.
Brush with a bit of olive oil.
Oven roast for 20 minutes, turn over, and roast for another 5-10 minutes until cooked (depending on size of meatballs) and golden brown.
